Samuel had a great birthday! I just want to say thanks to all of you that wished him happy birthday on FB, sent a card, or gave him a call yesterday. He loved reading each message and card. Grandma and Grandpa are going to be here tonight and he is having a birthday party on Saturday, so the celebrating will continue for a few more days :). I also want to say "thanks" for all the encouraging words I got yesterday about blogging again :). I figure that I spend so much time having inner dialogue with myself maybe if I actually write it down it won't seem like I am crazy ;).
Well, I just wanted to post a few pictures from yesterday and I also wanted to post a recipe that I am actually making for tonight. Being home this year I vowed to cook at home more this school year. I printed a bunch of new and easy recipes just to try to switch things up a little bit. Our new favorite recipe is found on French Dip sandwiches using my crock pot.
Samuel got a new Lego set, a Bears blanket, and a Lava lamp. He also requested chicken and dumplings for supper. It was the first time making them by myself, but they turned out great, I know my Grandma would of been proud :) <3.
Easiest Slow Cooker French Dip

INGREDIENTS:
3 pounds beef sirloin roast
1 (1 ounce) packet dry au jus mix
1 cup water

8 (1 ounce) slices provolone cheese
8 hoagie rolls, split lengthwise

DIRECTIONS:
1. | Place the beef roast into a slow cooker. Stir together the water and au jus mix; pour over the roast. Cover and cook on Low for 6 to 8 hours. |
2. | Remove the roast from the slow cooker and shred or slice. Open the hoagie rolls and top with beef and provolone cheese. Serve with small bowls of the hot au jus from the slow cooker. |
