Sunday, February 6, 2011- Day 93

Sorry no pictures today. Today has been a pretty good day. We had a great service this morning. We are in a series called "Lies" and is about breaking through the lies that we have made ourselves believe. This morning was about forgetting the lie that we are not good enough or not qualified to do the job God has for us. The pastor was talking about stop being afraid and just trust God is going to equip us. Our Creator made us for a reason and when we say we are not "good enough" for the job He has for us we are saying that He messed up somehow. I think for the most of my life I have been controlled by my own fear and insecurities. I know I have missed out on so many opportunities because I was too afraid to trust God and His plan for my life. It was a great reminder as my trip to Guatemala is just around the corner. After church we came home for lunch and I did pretty good with what I ate. Before Sam came home I had joined Weight Watchers and did really well with weight loss. Before Emma came home I did WW again and I did great. When  we were in the process of adopting Emma I was the smallest I had ever been in my teen/adult life. Over the past few years for various reasons I have gained most of the weight back:( I have tried several hundred times to get back on WW but with no success. Back in November WW came up with a new program. After Christmas I purchased the books and information but could not get back into it. Well since my motivation is a little bit higher right now I decided to give it another try. Hopefully this time I will stick to it. Well I had several people ask me about the chicken soup I mentioned yesterday, so I thought I would post the recipe. It is so easy and can actually bee eaten two different ways. You can make it as a soup or it can be made in the crock-pot for a dip with tortilla chips or filling for chicken tacos. Anyway you make it will be yummy! (warning: it may be spicy for some folks!)

Ingredients

1  lbs bone/skinless chicken breasts, cubed

1 medium sweet onion, chopped

(Seasoning salt, 1 cup water)

1 can diced tomatoes

1 can cream style sweet corn

1 env white chicken chili seasoning mix

1 can black beans, drained

(Shredded cheddar and sour cream)

If making it has soup, sprinkle chicken with seasoning salt and then boil until cooked. Mix all other ingredients and cook in another pot.I add 8-12 oz of chicken broth and add more water. When the chicken is cooked, let it cool and then shred into the soup pot with all the other ingredients. Let it simmer for about 15-20 minutes.

Instructions for crock-pot

Cut chicken into about  in cubes. Combine

chicken & onions; sprinkle with seasoning salt

and set aside. Mix tomatoes, corn, and water in

crock pot then stir in chili seasoning mix. Stir in

chicken, onions, and beans. Cook on high for 4

hrs (or low for 6-8 hours.) Serve with shredded

cheese and sour cream if desired.

ENJOY!
