There is some rain and cooler weather coming in today, so I am not feeling great. Headaches and blogging for me do not go together very well. I did just want to drop a note asking those who read this blog to pray about something with me. Samuel is having a hard time in taking tests for social studies and science. I think that part of it is being a 10 year boy and the fact that 5th grade and switching class is a whole new world for him. He is having a hard time remembering to bring the correct books home and just staying focused on each class. He had a social studies test on Tuesday and did not bring his book home Monday night! He brought home his class notebook, but let's be real, how well does a 10 year old boy take class notes! He bombed the test, but his grade is holding steady but he cannot afford to flunk another test. Oh, I can access all of the kids grades and what they made on each assignment through the school's website. So, as I am fussing about the social studies test grade I see that he really bombed a science quiz that was taken yesterday resulting in his science grade falling to an "F". In his defense, this quiz was a pop quiz and it counted as 40% of their grade so far. Not sure how that is a far assessment, but anyway. He has an "A" or "B" on the other 10 grades for science and this one quiz dropped his grade drastically. He has another science test tomorrow over the chapter and he really needs to do well on this test. I cried and he cried and it's just a hard situation. At home he does well on his homework and even that social studies test he knew what I quizzed him on, it's just not translating when he is at school :( As silly as it seems to pray about grades, I know that it will help.
I also meant to post a recipe that I made a few nights ago. It was so yummy and easy! The recipe does not call for pineapple, but I love frying up some pineapple to add to teriyaki recipes.

Honey Teriyaki Chicken Recipe

Ingredients
- 1.5 lbs boneless skinless chicken tenders
- ⅓ cup honey
- ⅓ cup teriyaki sauce
- 1 tbsp soy sauce
- 1 tbsp minced garlic
- ½ tsp. black pepper
- ¼ tsp. Salt
- 2 tbsp. sesame seeds
Instructions
- Chop chicken tenders into 1 inch pieces. I think it looks prettier when you vary the shapes between rectangular chunks and triangles. It just gives it a more "restaurant" look.
- Transfer chicken into a large bowl. Add the teriyaki sauce, soy sauce, honey, minced garlic and salt and pepper. Massage into chicken with hands.
- Transfer chicken (liquid and all) into an oiled and heated pan. Place the stove on medium high heat for about five minutes. Stirring occasionally.
- Crank the heat up to high, stirring occasionally. Cook until sauce has reduced. This process can take between 10 and 15 minutes. When the sauce thickens up and starts sticking to the chicken, add sesame seeds. Stir.
- Remove from heat. Let sit for five minutes before serving.
