My encouragement today:
" God has made us what we are. In Christ Jesus, God made us to do good works, which God planned in advance for us to live our lives doing." Ephesians 2:10
Well, Fridays are my weight in days and I was very hesitant to weigh yesterday because the whole time we were in Vegas I did not track a thing. I tried the first day, but I did not know what how many points most of the things were that we were eating and I just kind of gave up. With great delight I lost 1.8 pounds last week. That is a total of 5 pounds since back on WW. Jeremy let me sleep in yesterday and today and I slept until almost 10:00!! That is so not like me, but my body has been so thrown off since summer began. Yesterday I took the kids out for a little while to get Jeremy something for Father's Day. We got home and I walked (in my long driveway) while the kids played in the yard. Yesterday afternoon Sam started complaining of a stomach ache and started running a fever. He seems better today but his temperature is still around 101. We are all getting ready to head back out on the road tomorrow so I am praying he feels better. Jeremy leaves tomorrow for Virginia to finish up his last class before he begins his dissertation and the kids and I are headed North to my parents house for the week. I am praying for a quick drive tomorrow and that the kids do not drive me too crazy!
Well since we will all be leaving tomorrow, we are doing Father's Day dinner tonight. So for dessert I made this WW recipe of Chocolate Chip Peanut Butter Pie worth 8 points.

Ingredients
1/2 cup reduced fat peanut butter
4 oz low-fat cream cheese
4 Tbsp fat-free cream cheese
12 oz fat-free condensed sweetened milk
2 Tbsp lemon juice
1 cup whipped topping
4 Tbsp of mini chocolate chips
6 oz pie crust
Since we will be gone all week and to avoid the temptation to eat more than my serving, I made 6 little pies with the individual pie crusts. Since we have not eaten them yet I am not sure how good they are, but the batter tasted yummy so I am guessing they will be pretty good.

I made a very simple dessert last night and it was only worth 2 points. It is a WW ice cream sandwich cut in half and then piled with fruit. It was really yummy!

Here a few pictures of the kids from yesterday.

If you think of us tomorrow pray for safety of travel as we are all traveling.

4 oz low-fat cream cheese
4 Tbsp fat-free cream cheese
12 oz fat-free condensed sweetened milk
2 Tbsp lemon juice
1 cup whipped topping
4 Tbsp of mini chocolate chips
6 oz pie crust
- In a large bowl, using an electric mixer, beat together peanut butter and both types of cream cheese until smooth. Gradually beat in milk and lemon juice; fold in whipped topping and 4 tablespoons of mini chocolate chips.
- Spoon peanut butter mixture into prepared pie crust and smooth top. Chop remaining tablespoon of chocolate chips; sprinkle over top. Cover with plastic wrap and freeze until firm, at least 4 hours. Slice into 10 pieces and serve. Yields 1 piece per serving.
