I had a pretty crazy day today. When I woke up this morning I had an email from a lady who is interested in hiring my as a nanny for her two children. I was surprised to get the email because I did not apply for the job that she posted. The family lives in Albany Park, but the hours are full-time, actually longer than full-time. We are supposed to talk this week on the phone. I was excited to get my first lead for a job! Around 10:00 my phone rang but I was not able to get to it in time. I called the number back and it was for a Christian school in Chicago that I had talked with back in May when we knew we would be moving. I had a great phone interview with the HR lady, but all they had open were assistant jobs for 15-20 hours per week. I knew that I would need more hours than that, but they sent me an application anyway. I never filled it out because time got away and I got an email that all positions had been filled. I was also struggling with maybe I was playing it too safe to try to find a job in a Christian setting. Anyway, the HR lady was calling me because they had a PreK position opening and they thought of me and wanted to know if I would be interested! WOW! Yes, I was interested! Well, as we got talking I was told that this position was actually at their location located 30 minutes North of Chicago. The original interview in May was for positions at their Chicago location. I googled directions from Albany Park and by car it is about 25 minutes away (13 miles), but we are planning on only having one car when we move. Parking is a nightmare and my van is not trust worthy to go to far. Since Jeremy will have the kids he will need the car. I checked how long it would take me on public transportation and it would take me 1 hour and 18 minutes and the last mile I would need to walk. I was also convicted of the fact that the school in not in the city. I felt like the Lord was saying, "I am not sending you to Chicago to hide out in a Christian school in the suburbs." Well, maybe not in those words... I think you get my drift. So, my mind has been in a whirl all day. I was then reminded of something I read in my devotions a few weeks ago:

"Rest in Me, My child. Give your mind a break from planning and trying to anticipate what will happen. Pray continually, asking My Spirit to take charge of the details of this day. Remember that you are on this journey with Me. When you try to peer into the future and plan for every possibility, you ignore your constant Companion who sustains you moment by moment."

I was once again reminded of the trap that my mind gets stuck in so many times. I would ask that you would pray for me as I make decisions about where to work. I really want to be where God wants me and not make a decision because I am desperate for a job.

Jeremy went up to his school today to get things from his classroom. He took Chloe with him, so I had a pretty quiet afternoon and Sam, Emma, and I took a great nap! The weather was beautiful today so we spent some time playing outside for a few hours. We also found out that two couples came to the open house. One couple thought it was too far out and the other couple is interested and they are trying to get prequalified. That sounds great except our realtor is pretty sure they will not be approved...oh course!

I made another WW dessert tonight and it was pretty good. I made Apple Tarts- 6 points.

Sorry it did not photograph very well.

Ingredients

3/4 cup of flour

1/4 tsp sugar

1/4 tsp salt

2Tsp of butter or margarine

3 apples

cinnamon

  • Preheat oven to 350°F (175°C). Mix flour with 1/4 teaspoon sugar and salt.

  • Cut margarine into flour mixture with a fork until flour is the consistency of cornmeal. Mix with 2 or 3 tablespoons cold water until dough forms a ball (a little drier is better than a little sticky). You can make the dough up to 24 hours ahead of times if you wrap it securely in plastic wrap and refrigerate it until you need it.

  • Divide dough into four pieces. Roll each into a ball and then flatten into a disc about 5 inches (13 cm) across. Place the discs on a baking sheet a few inches apart.

  • Combine remaining sugar with cinnamon.

  • Arrange apple slices on top of dough discs, overlapping and fanning them (so they make a flower shape). Sprinkle generous amounts of sugar-cinnamon mixture over them.

  • Bake until crust is browned, approximately 35 to 40 minutes. Serve warm or at room temperature

I added an extra 1/4 tsp of butter to the top while they baked so the apples would not dry out. I also topped it with 1/2 cup of frozen vanilla yogurt.

Here are a few pictures from today taken by the kids!
