So, some that read my blog yesterday teased me because I did not mention WHERE Jeremy and I are going for our church planting conference. So, we are going to Las Vegas!! You have permission to laugh. I would never put church planting conference and Las Vegas together, but that is where we are going. We leave tomorrow around 4:00. The kids are staying with Steve and Bev parks (Parks and "B") to our kids and they are going to have so much fun! B already informed me that she would be spoiling them rotten. I have to admit that the thought of going to Las Vegas does not appeal to me at all and I have struggled from the beginning about my attitude about this trip. I am looking forward to Jeremy and I spending a few days together even if it means we have to go to Las Vegas. This trip is an assessment trip that is organized by a organization called Launch. They help families in their church planting endeaver if they determine that you have what it takes to plant a church. It sounds kind of crazy when I say it like that, but that is what they do (no pressure, right?) We will be going through several days of sessions with several other couples (maybe 15) who are also looking into planting a church. We will discuss the do's and dont's of church planting, offer encouragement, and offer some helpful advice. I will not be bringing my computer so I will share about our trip when we return. As you think about us over the next few days I would ask that you would pray the following for us, (1) Pray that I will have peace tomorrow and Wed. when we travel. I HATE to fly! I get nervous when I go to the airport even when I am not flying anywhere, (2) The kids will behave (Chloe) while we are gone and that I will not be consumed with worry about them, (3) That Jeremy and I will be still before God and really listen to what He wants us to hear this week, (4) That our house would sell while we are gone:).

I tried another recipe tonight from WW. I made Chocolate Chip Meringue Cookies. I ever never made meringue cookies and I really did not know what I was doing. The recipe said to watch for peaks in the egg white and sugar and I mixed and mixed and mixed... I never saw any peaks. Here are what they were supposed to look like;



Ingredients

1 spray of cooking spray

4 egg whites

1 cup of sugar

1/2 tsp of vanilla

1/2 cup mini-chocolate chips

Instructions

Preheat oven to 200ºF.

  • Coat a large baking sheet with cooking spray; coat with a light dusting of flour and shake off excess.

  • In a large mixing bowl, beat egg whites with an electric mixer until soft peaks form. Gradually add sugar and beat until stiff, glossy peaks form; gently fold in chocolate and vanilla extract.

  • Drop mixture by heaping tablespoons onto prepared baking sheet about 1 inch apart, making 24 cookies.

  • Bake until lightly golden and no longer sticky on the surface, about 1 hour. Turn oven off and let cookies sit in oven for 1 hour. Transfer cookies to a wire rack to cool completely. Yields 1 cookie per serving. 1 Point each


Okay so I did not take a picture of mine because Jeremy thought they were some kind of concrete for an art project. He had no idea that it was food:)

It took so long to beat the mixture that I had to have Sam help me hold the mixer because my arm was getting tired. Ah, maybe they are 1 point because you actually are working out when you make them!!:)



I probably could have cooked them a little longer because they were a little gooey in the middle, but the kids LOVED them! Believe it or not I thought they were a little too sweet.
